These plump green beauties are picked early in the season in South Australia and are produced by a unique 6-month natural fermentation process in which the natural olive bitterness is removed and the natural colour is thus retained. The resultant brine gives a complex maritime-salty and earthy herbaceous mouthfeel which finishes with subtle smokiness and a lingering olive dryness.
